  1. In a medium saucepan, melt butter over medium heat. Add almonds and stir in butter until lightly toasted. Remove from heat and let cool.
  2. In a large bowl, combine the spinach with the toasted almonds and cranberries.
  3. In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, onion, paprika, white wine vinegar, cider vinegar and oil. Toss with spinach just before serving.

Ive made this recipe a couple of times now. The first time I made as the recipe (other than replacing teh vegetabe oil for EVOL). The second time I thought it needed a few changes ~ I added a little Feta cheese and a finely chopped onion. I also thought there was way too much dressing the first time, so the second time around I halved the dressing and found it was so much better. Great salad ~ thank you for sharing.-12 Jan 2013

When I saw this recipe's ingredients, I wondered what the fuss was about. Today, as I eat yesterday's wilted leftovers from a Tupperware container at 9am in the morning, I thought I'd write a review! I make this salad all the time now. I use spinach and other greens. I use toasted (10 minutes in 350 oven - no butter) pine nuts now insead of the almonds and will never go back - they are perfect for this salad. I add one container of blue cheese (a must for us - perfect blend of flavors). I use one 6 oz package Craisins. I've never used the poppy seeds - but the toasted sesame seeds (also at 350 for 10 minutes) are a must. I may or may not use dried minced onion. Toss all dressing ingredients in a container with a lid - and shake! This salad has been a hit with everyone I've served it to - dinner party, Easter lunch, dinner at home. It is so easy and easy to transport, too - just add the dressing once you get to where you're going. Try it - I bet you'll love it!!-02 Apr 2002


Jamie's Cranberry Spinach Salad


This is a many textured and delicious salad. The seeds and almonds make it pop and he cranberries add sweetness. Toss on some blue cheese or feta cheese crumbles for additional flavor.

Total Time: 25 minutes

Ingredients:

1 tablespoon butter
3/4 cup almonds , blanched and slivered
1 pound spinach , rinsed and torn into bite-size pieces
1 cup dried cranberries
2 tablespoons toasted sesame seeds
1 tablespoon poppy seeds
1/2 cup white sugar
2 teaspoons minced onions
1/4 teaspoon paprika
1/4 cup white wine vinegar
1/4 cup cider vinegar
1/2 cup vegetable oil
Feta cheese or blue cheese crumbles, to top (optional)

Directions:

In a medium saucepan, melt butter over medium heat. Cook and stir almonds in butter until lightly toasted. Remove from heat, and let cool.

In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, onion, paprika, white wine vinegar, cider vinegar, and vegetable oil. Toss with spinach just before serving.

In a large bowl, combine the spinach with the toasted almonds and cranberries.


Cranberry Spinach Salad with Poppy Seed Dressing

Poppy seed dressing adds flavor and style to this spinach, cranberry and feta cheese salad.

Ingredients

  • 1 (10-ounce/284-gram) bag of baby spinach leaves
  • 1 cup (250-ml) dried cranberries
  • 2/3 cup (150-ml) toasted shaved almonds
  • 4 green onions, diced
  • 1/3 cup (75-ml) crumbled light feta cheese
  • 2/3 (150-ml) cup canola oil
  • 2 tablespoons (30-ml) balsamic vinegar with raspberry juice vinegar
  • 1 tablespoon (15-ml) poppy seeds
  • 2 teaspoons (1-ml) granulated sugar
  • 1/2 teaspoon (2-ml) salt
  • 1/4 teaspoon (1-ml) pepper

Preparation

1. In a large salad bowl, combine spinach, cranberries, almonds, green onion and feta cheese.

2. In a separate small bowl, combine canola oil, balsamic vinegar, poppy seeds, sugar, salt and pepper. Mix well.

3. Pour dressing over top of salad ingredients and toss lightly. Serve immediately.

Step-by-step

  1. Preheat the oven to 200°C/180°C fan/400°F/gas mark 6.
  2. Drain and add the chickpeas to the processor along with the feta, spinach, lemon zest and paprika, then blitz until combined
  3. Fold a large sheet of filo pastry in half, dollop a quarter of the mixture into the centre, push your thumb into the middle to make a space for the filling to expand as it cooks, then bring the sides up and very loosely pinch into a parcel. Repeat to make 4 parcels.
  4. Add to the ovenproof pan with 1 tablespoon of olive oil and fry for a couple of minutes to crisp up the bottom, then bake in the oven until beautifully golden and crisp
  5. Swap to the thick slicer in the processor. Scratch a fork down the length of the cucumber all the way round, then run it through the processor. Swap to the fine slicer and run through the peeled onion
  6. Tip the veg into a bowl, season with salt, squeeze over the juice of the zested lemon and scrunch to mix. Finely chop and scatter over most of the top leafy half of the coriander and mint
  7. Put the almonds and olives into the empty pan with 1 tablespoon of olive oil. Thickly slice the tomatoes and arrange nicely on a large platter
  8. Slice the lettuce 1cm thick and add to the platter, then sprinkle over the cucumber and onion, drizzle with the extra virgin olive oil and spoon over the contents from the pan
  9. Serve the parcels with a good dollop of yoghurt, a good drizzle of honey and the salad

Spinach and Orzo Salad with Cranberries and Almonds

Ingredients:

  • 1 cup whole wheat orzo, uncooked
  • 3/4 cup toasted sliced almonds
  • about 3/4 of a 6 oz bag of baby spinach, thinly sliced
  • 3/4 cup dried cranberries
  • 4 oz gorgonzola, crumbled
  • 2 tablespoons toasted sesame seeds (I toast in a nonstick skillet over med heat for about 5 minutes)
  • 1 tablespoon poppy seeds
  • 1-2 tablespoons sugar
  • 2 teaspoons minced onion
  • 1/4 teaspoon paprika
  • 1/2 cup cider vinegar
  • 1/3 - 1/2 cup oil (I used grapeseed oil, but canola or light olive oil will work)
  • salt and pepper to taste

Directions:

  1. Cook orzo according to instructions on package, set aside to cool.
  2. In bowl, whisk together sesame seeds, poppy seeds, sugar, onion, paprika, vinegar, oil and pinches of salt and pepper.
  3. In a large salad bowl combine orzo, almonds, spinach and cranberries. Gently toss ingredients with 1/3-1/2 amount of dressing, add more or less to your liking. I don't like my salad overdressed. Add gorgonzola and gently toss again. Serve immediately at room temperature or slightly chilled.

Cranberry Pecan Spinach Salad

This salad is enriched with nuts and seeds which makes it a true vitamin bomb. Enjoy its unusual and interesting taste and after the meal you will feel better and you`ll get an extra energy. It is because fresh spinach is rich in iron.

After our most popular salad recipes Strawberry Spinach Almond Salad I decided to make a fall version &ndash Cranberry Pecan Spinach Salad. This is a great way to enrich your table at this time of year and to enjoy healthy and tasty food.

Mandarin orange, poppy and chia seeds dressing gives it a special taste. You can play with the ingredients and make different combinations. I decided to try this one, but expect some more combinations coming from me, soon. It can be served as a side dish, or a complete meal.

How to make these delightful Salad?

  1. MAKE THE DRESSING: Squeeze two mandarin oranges and pour the juice into a medium dish. Add extra virgin olive oil, apple cider vinegar, honey, poppy seeds and chia seeds. Then add a pinch of salt, paprika and pepper. Mix well and set aside.
  2. MAKE THE SALAD: Slice both an apple and a pear. Put spinach and arugula, sliced apple and pear, pecans and cranberries.
  3. Step 3 Put the dressing over the salad and mix well. Put crumbled feta cheese over it.

NOTES:Serve fresh

Jamie's cranberry spinach salad recipe - Recipes

1 tablespoon butter
3/4 cup almonds, blanched and slivered

1 pound spinach, rinsed and torn into bite-size pieces
1 cup dried cranberries
2 tablespoons toasted sesame seeds
1 tablespoon poppy seeds
1/2 cup white sugar
2 teaspoons minced onion
1/4 teaspoon paprika
1/4 cup white wine vinegar
1/4 cup cider vinegar (I used tarragon vinegar which I had on hand)
1/2 cup olive oil (the recipe called for vegetable oil but I used a light olive oil)


In a medium saucepan, melt butter over medium heat. Cook and stir almonds in butter until lightly toasted. Remove from heat, and let cool.

In a large bowl, combine the spinach with the toasted almonds and cranberries.

In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, onion, paprika, white wine vinegar, cider vinegar, and vegetable oil. Toss with spinach just before serving.
