Dissolve the yeast in warm water together with the sugar and 4 tablespoons of flour. Let it rise a little. About 10 minutes.

Put the yeast over the rest of the flour, add salt, oil and knead until the dough is elastic and non-sticky.

Leave to rise until it doubles in volume.

Divide the dough into several small parts. Each part is made into a roll which we then divide into two equal parts and knit it thus making pretzels.

Boil 2 liters of water with baking soda and when the water starts to boil put 4-5 pretzels and leave for a maximum of 30 seconds.

Remove from the water and place directly in the tray lined with baking sheet.

Bake at 180 degrees until nicely browned.

4.5 / 5 - 3 Review (s)

I was craving sesame pretzels, fresh and tender. But as I usually find such pretzels only on the Boulevard that leads to the Great Square and today I didn't get to the center, I decided to cook them myself. Coincidentally, I just bought sesame seeds these days and was really wondering what to do with them.

Sesame seeds are made up of healthy fats, are rich in polyunsaturated fatty acids, are a natural source of protein, are free of cholesterol, contain minerals such as iron, zinc, copper, calcium, magnesium, manganese and also a significant amount of vitamin B and E.

I have never prepared this recipe but I found out pretty quickly how easy it is to prepare wonderful sesame pretzels.

Dough ingredients (for 4 pretzels):

  • 1 teaspoon raw sugar
  • 75 ml of lukewarm water
  • 5 gr dry yeast
  • 225 gr flour
  • a pinch of salt
  • 25 ml olive oil
  • 50 ml soy milk with vanilla

Ingredient about:

  • 1 tablespoon soy milk with vanilla
  • 1 teaspoon honey or maple syrup
  • sesame or poppy

Method of preparation:

Warm water, sugar and dry yeast mix in a bowl and let rise for 10 minutes. Over the sifted flour add salt, olive oil, soy milk and yeast mixture. Knead the dough and leave it to rise, in a bowl greased with olive oil, for an hour.

The fluffy dough is divided into four equal balls. Each ball is further divided in half and each half is rolled on the worktop or in the hands until a string about 40 cm long is formed. The two dough cords are intertwined and joined. The pretzels are placed in a tray, on baking paper, where they are left to rise for another 15 minutes, during which time the oven is heated to 190 degrees.

Grease the pretzels with the mixture of soy milk with vanilla and 1 teaspoon of honey or maple syrup, then sprinkle them with plenty of sesame or poppy seeds. My sesame pretzels browned perfectly in just 35 minutes and were delicious.

Lucky and the sesame pretzel

Even my puppy was eager to taste (a small piece, of course without sesame)!

The reference image and the one in the article belong to me, both being made under the rays of a strong gentle autumn sun.

I often make confectionery cakes and cakes, but I also like pastry and I even have periods when I feel the need for "cakes", especially made of leavened dough - most often cake, but I also really like rolls with berries ( raspberry or cranberries ). Polish pretzels they are also on my list of pastries, but I haven't had a chance to make them yet.

So, this is the first time I've done it polish covers. I used the pastry recipe I know, with the mention that there are pastries that do not lay eggs in the dough for polish covers and also in some pastries a mixture of lard and margarine is used and I put only butter.

NEW! These wonderful Polish pretzels can also be enjoyed during fasting periods. Find their recipe here (link).

Ingredients Polish pastry recipe

  • 50 g soft butter 80%
  • 150 ml whole cow's milk
  • 7 g dry yeast
  • 75 g caster sugar
  • 2 sachets of vanilla sugar
  • 30 g of honey
  • 1 or mic www.simonacallas.com
  • 300 g quality flour type 000 (cake)
  • a pinch of salt
  • 1 teaspoon lemon peel
  • 1 tablespoon oil

IMPORTANT! Read the recipe carefully. I used whole milk and quality flour - I always use for pastry dough flour 000 and I always use whole cow's milk, the fattest (consequently the most consistent). If you use skim milk and / or 650, 550 or other flour, it makes sense that the dough will come out thinner and then you will need to supplement the amount of flour. I do not accept the comments of certain malicious and greedy people.

  • 70 g 80% soft butter (for greased dough)
  • 1 small, beaten egg (for greased pretzels) www.simonacallas.com
  • 300 g caster sugar
  • 600 ml of water www.simonacallas.com
  • 50 g of bee honey
  • grated lemon juice and peel (optional)
  • 1 tablespoon rum (optional)
